## You are not buying a booth permit. You are buying an operator who knows who holds what.

Events fail inspections in the boring places. Wrong permittee. Alcohol training gaps. A stand that looks fine until the health inspector asks for the person of record.

## How do food and beverage operators handle compliance and permits for McKinney events?

Operators who run multi-stand programs name permit ownership, alcohol responsibility, and inspection contacts before doors. They do not leave that to the day-of lead. McKinney is a common HQ and venue footprint for DFW buyers. The same discipline applies across Texas cities. Local health rules and special-event stacks still differ by municipality.

This piece is buyer education. It is not a substitute for city or state guidance. Rules change. Confirm with the authority that covers your site.

## Health permits: what should venues clarify first?

Clarify who pulls or maintains the food establishment or temporary food permit for each stand or program, and who is the permittee of record if an inspector arrives mid-event. Temporary event food, permanent concessions, and catering kitchens are not always the same paperwork. Operator lanes (multi-brand venue programs, festival footprints, municipal parks) usually need a clear map of which entity holds which certificate.

Ask your vendor:

1.  Who is the permittee of record for food at this site?
2.  Which permits cover permanent stands vs temporary or satellite setups?
3.  How do you document hot-holding and cold-holding checks during service? (Food-safety training commonly teaches 135°F hot / 41°F cold. Ask how they log it.)
4.  Who speaks to the inspector if something fails mid-event?
5.  What is the written plan if a stand must close until corrected?

Fuzzy answers are a tell. "We handle compliance" without names is not a plan.

## TABC and alcohol: who owns the pour?

If beer, wine, or spirits are in scope, someone holds TABC-related responsibility for lawful service and training. Venues should not assume the concessions company automatically owns every alcohol permission for a municipal park, fair, or rented hall. Ask who holds what. Ask what is out of scope.

Ask your vendor:

1.  Is alcohol in scope for this engagement?
2.  Who holds TABC-related responsibility for pour and server training?
3.  How do you handle ID checks and cut-off calls when lines peak?
4.  What happens if the venue's alcohol permissions and the operator's staffing do not match?

If alcohol is out of scope, that should be written. Silence is not clarity.

## Operator lanes vs a single booth: why ownership maps matter

A single booth at a festival can often sit under one temporary food permit and a simple lead. A venue concessions program is different. Multiple brands, permanent stands, satellite carts, suite catering, and alcohol points of sale each need a clear owner. Score the conversation 0-2 on each of these ten asks (0 = no answer, 1 = vague, 2 = specific and written):

1.  Food permittee named
2.  Temporary vs permanent coverage mapped
3.  Holding-temp process described
4.  Inspector contact named
5.  Stand-closure plan written
6.  Alcohol in or out of scope stated
7.  TABC-related owner named (or N/A written)
8.  ID / cut-off process under peak load
9.  Multi-stand ownership map (not "we'll figure it out")
10.  Written scope for what the operator will and will not carry

Under 12 means you are still interviewing definitions, not operators.

## What "good" looks like before opening day

Good looks dull. Names on the permit map. Training records findable. The lead knows who calls the city if something breaks. Plenty of venues and events run food in-house and do fine. If you outsource, outsource the operator who can sit through this sheet without theater.
